Chef Amanda was born and raised on beautiful Kaua’i. Her exposure to fine dining and becoming fascinated with the vast flavors of food at such a young age led her to believe how happy and excited the taste of dishes made her. Chef Amanda attended Le Cordon Bleu culinary school in Miami, FL.
Upon graduating, she began her career in busy Miami where she dove head first into the private chef world, where her clientele was predominantly celebrities and athletes. She grabbed the attention of several athletes, becoming a full time chef for them and provided all meals adhering to their lifestyle, nutrition, and performance. In between schedules with her private clients, she worked and apprenticed at upscale restaurants with bustling food scenes in the city of Miami. It was at these thriving high volume restaurants where she truly learned hands on and was able to hone in on her skills within a commercial kitchen. She was also able to obtain numerous sponsorships to participate in community events and festivals, where she was able to touch the locals in the city of Miami with her eclectic food.
In Summer of 2017, she landed an opportunity to be a full time personal chef for an overseas basketball player. Her first year as an international chef began in Barcelona, Spain. Her second year she got the chance to experience Paris, working with various fresh produce and ingredients throughout Europe. While there, she was also able to work part time in 2 restaurants learning first hand about the authentic food and culture of both major cities, and under the direction of Spanish & Parisian chefs. She recently decided to proceed with her dream of moving back home to Kauai to focus on providing memorable experiences while using the island’s farm to table concept, and sharing all of what she’s learned throughout the years under the culinary realm.
